So now that Samsung is supposed to be making Google Play Music the default music app in their phones and tablets, think there will be a way to stream music like Spotify directly to the watch? I invest heavily in YouTube Red and GPM and don't want to have to switch back to Spotify...

The default sony app is garbage. It does pick up google music, but there's no track info, no artist, nothing. Just a play button that doesn't even play the song.

I would like to see that too. I only subscribe to Play Music to get Youtube Red. Otherwise I'd still be using Spotify.

Is there a way to choose a song that's in my phone's media library to play on the phone? I'm using Poweramp, but wouldn't mind moving to Samsung music or Google Play music if they have Tizen apps.

I don't know if this works with Poweramp, but you can use pre-installed mp3-player app on your Gear to control your music on your phone. At least with Google play music.
Inside mp3-player app you can choose the source with the icon on the top right.

Hi when asking the watch assistant to play a song on Spotify it will just do a web search. Asking it to play a song will open play music even though Spotify is set to default. Spotify works by default on my phone and home but the watch just doesn't want to know. Any way to fix this so annoying
