Some roms or kernel have uses some ram to improve other speeds. This is why the ram can differ a little.

Im totally suprised because I though that the HTC Jade (touch 3G) has 192MB of RAM but the system does only use 123mb of it :S Is this normal and if, why?

On all devices(depending on the ROM you use) your actual available program RAM at startup is decreased from the actual hardwares amount.
For instance, the fuze/touch pro has 288 MB RAM, but when you start the device up you get about 200MB free RAM. With the custom ROM i'm using i actually only get 189.00 MB free Program RAM.
As to what occupies the seemingly unused space, i'm unaware of. All i know is it seems to be taken up by the ROM image.

so.. ist there any possibility to hack those unused space of ram with an custom rom or something? I mean 60MB makes about 50% of the ram which is currently used :S

You can't "hack" it. some ROMs use less RAM and you get a nicer bigger amount of it since your OS takes less space.. you can find a ROM for your device with more RAM space... that's the best you can do.
Hello i just wonder if it's possible to get more ram acces on htc sensation in the most rom you have like 560 ram, the phone have a kapasitet off 768 mb ram, if you can get more ram free the phone will be faster i think. Can some devoper answer me on that question if it possible to do that?
You don't think that a dev would get us more RAM if he could do that. Some of the total RAM is used for system processes and will never show up as available.

More ram doesn't mean more speed.
If you deleted a lot of HTC stuff i looks like you get more speed with more ram available.
That isn't true, with those deleted apps you also kill a lot of background processes.
Thats the cause of speeding up.
On the other had your GPU also takes some ram if you increase it to gain more ram your GUI will be horrible.
Looking at the Bricked kernel which has even taken more ram to increase smoothness when playing games ect.

It's not exactly how much ram you have.. its about how much free ram. I'm running what's in my signature and I also have this app called app quarantine that helps. Maybe look into it? Try it out.
Also arhd Roma and fauxs latest kernels give extra RAM with zram and zcache

756MB was never available to the OS, roughly 200mb is reserved for system only (hardware like CPU and GPU) so only 500ish is available for the OS. This was the same in GingerBread but in ICS HTC just decided to let the OS show the "true" value available to the OS and not the "full" RAM available
I have been researching this for months now,
Some phones have 1 GB but the available ram for the OS and apps is normally less. Like the Moto G, the available ram is only 882 mb
I have had phones in the past that has 1 GB ram and the available ram is more than 970 mb (Chinese brands)
I want to make use of the most of the 1 GB the phone has even if its on the cost of other things, like the GPU memory.
If someone can help that would be really beneficial.

Those ~100MB are most likely used by system/kernel. Maybe some are used for the graphics processing. I cant tell more.
You can get more swap space using zram. With latest CM build I have ~100MB of swap.
You must ask to a dev like faux, this is a "kernel stuff"

Wrong section but, the ram it shows available it's really the ram available... The left ram is used for system things, which is why it isnt showed. Not sure it can be raised up
Wait for delta roh and arbir to add the moto g in their TURBO BOOST, it could increase the ram of my old one v of 200+ mb (it uses data and cache swap)

You mean the consume of 700 mb of RAM, close those Apps that you dont need in background.
Also, RAM usage differs in various Android versions and UXs. For example, 4.4 AOSP is better with memory handling than Sense would ever be. On top of that, different kernels handle memory differently by different OOM values
