Each custom ROM has its advantages. It's a matter of taste which one you'll chose.

Hello guys, I'm currently using stock 5.0.2, is there any other rom that will perform better?
Is cm12.1 stable enough?
Until right now, 5.0.2 stock has given me the best performance. I used a couple of Roms and they all have amazing features. But stock is stable, fast, multitasking is simply working for me (note I'm using the EU optimized stock version), I can use xposed with no issues.
I suggest you to give them a try, I liked Blisspop features a lot, and other Roms are also amazing
There are piles of ROMs out there for this phone and some you will like better then others so I would recommend to try some out. Also cm 12.1 seems to be fairly stable.

if you meant lightest try any AOSP ROMs, people rave about AOSPExtended ROM if you are interested in Noughat.
except for that the lightest longest lasting would be the KK ROMs. the stock ROMs do seem to have bit of an edge over the custom ROMs though

question like in the title, because some years ago, as I rooted/unlocked my SG II (not plus!) and installed CM, I had to flash a kernel or something. I also had Stock-ROM 4.2.2. Don't remember exactly.
Now I want to install a Custom ROM like CM 12.1 (andixlm) or CM 13 (GHsR), which ones are recommended for more functions and better performance.
If I have to flash a kernel, which one are good ones?

A custom kernel isn't necessary to upgrade from stock rom to custom rom. However there are 2 custom kernel Nebula one (https://forum.xda-developers.com/showthread.php?t=2746991&page=15) and Mosh one (https://forum.xda-developers.com/showthread.php?t=2615010&page=58). I really like the first, because it has a lot of governors, schedulers and features. Lastly CM13 has more feature of CM12, but it's less stable, so choose what you like.
Pixel Experience
Pixel Experience is the favorite Android Custom ROM, because this ROM is light like the stock android. There are not many adjustments to this ROM, this has the aim of optimizing the performance of this ROM.

One more ROM based on AOSP, namely Havoc OS. Even though it has the same AOSP base as other ROMs, Havoc OS has its advantages.

Lineage OS is the successor to CyanogenMod, which initially had stopped development. Lineage OS or commonly abbreviated as LOS was launched in December 2016.
This ROM is fairly constant and light, so it can be taken to play games.

EvolutionX is the ROM that I use today. Quite happy with the performance of this Custom ROM. EvolutionX has many customizations that can be adjusted according to your wishes. This ROM has a balancing characteristic (balanced) between performance and battery.
Based on my experience as a user of this ROM, EvolutionX is light, fast, and reliable for playing games like PUBG.

Why isn't there an official custom rom like twrp, pitch black recovery for Realme 5 pro? The phone has been released for a few years now, whilst I appreciate the non official version of twrp there could be some updates that could possibly fix some bugs and improve on the existing version.
ROM? No sir. You're talking about recovery. Not ROMs. ROM is like Pixel experience, aosip, Aicp etc.
Why? Mostly because this device isn't too famous or popular with custom ROM users. Probably that's all.
