I've read that your files are still accessible even after a factory reset unless you encrypt them?

Hi, doing a factory rest is your best option. This will wipe all of your personal data off of the phone, it cannot then later be retrieved by a new owner of the phone.

Just perform a hard factory reset on your device. Then fill the device's internal memory with blank txt files and perform another hard factory reset on it again. This way you can be sure that nobody will be able to recover the data that was stored on your device.

[Q] roooted, unlocked bootloader, is it safe to do soft reset?

I've rooted and unlocked bootloader on my Verizon S3.
I want to know if I can do a soft reset to setup new gmail account on the device?
is it safe or will it brick the device because bootloader is unlocked?
Any help is appreciated.

Nothing will happen. You will not brick your device.
By soft reset I mean Factory Data Reset to set it up as a new device?
Will it remove the root privileges?
Sorry for asking again.
Thanks advance
No it just resets the ROM.

Just for clarification...
Factory reset will reset your data partition, not system. Your ROM lives in the system partition and all of your apps, preferences, etc live in data. So doing a factory reset will simply wipe all of your application data.

Can I reset Nexus 5 but BUT still save pictures, files?

Is it possible to reset the Nexus 5 phone; BUT still be able to save the pictures / docs folders ?
I was able to do it on HTC One (also didnt have SD card slot like Nexus 5) but it seems standard way to resetting will wipe everything off.
Any help will be appreciated.
If you do a factory reset in the stock recovery it'll wipe your entire device. Back up everything off the device before you do a factory reset
Nope

Unlocking the boot loader to flash TWRP wipes the phone. Factory reset wipes the phone. Bottom line don't forget the password

Yeah sadly with Android 5.0+ you need root to get rid of any lockscreen security. The only way is to factory reset if you want to remove it. But sadly as mentioned rooting would wipe the phone since you have to unlock the bootloader.

No. You can try make backup with titanium backup to minimize afterwipe restoration.

And actually there are one-click root apps that, if they find an exploit, use it to root. But afaik they're very rare by now, and those apps are extremely sketchy (like kingo root,...). So if you come across one WHATEVER YOU DO do NOT install it and use it.
