The roms they are using are called Custom Roms made by developers or users and mostly found on this forum.
They use Custom roms for different reasons like Better layout, Save more battery etc...
Example custom roms :

Hi All,
Just recently got the Skyrocket (well, Rogers version) and just had a few questions as I'm looking into rooting the device, mainly so that I can under clock and conserve battery life in general without compromising the device experience too much.
I have a few questions I was hoping the community could assist with
1) Is there a post that kind of gives a summary of basic terms? (i.e. flashing, ROMs, rooting etc)
2) Any step-by-step walkthroughs for flashing my device using a Mac? Recommended ROM version I should use?
3) Are the AT&T and Rogers variants the same?
Thanks!
Everything you need to know is here

Thanks! Anything even more basic? i.e. what is a ROM?

ROM (Read Only Memory) is a software that is stored in your phones internal memory. People also use the term ROM as for flashing an updated version of the firmware for their phone. There are other custom ROM that are available that are made from ROM developers here on XDA. These custom ROM has extra features such as WIFI tethering, theme options, speed optimizations, etc.
Then there are Kernels.. which I will leave for you to do some reading. LOL.

So rooting allows you to install a custom ROM?
...so kernels?
ROMs and kernals are a bit different. Kernals (or atleast the only ones I know of) are more used for performance tweaks, such as overclocking. But first you need to root your phone, then install a CWM recovery and you're all set!

I think that this thread will answer most (if not all) of your questions.

Hey just wanna let u guys know i have mac too.
HI!
i think it would be very usefull to have a list of roms that really work on desire s!!!
Like i ve tested saga3d 5.1 rom and fallout evolution 5 rom (both work 100% on my phone) i want u all to tell me which other roms in any android version work 100%!
AND REALLY WORKS MEANS EVERYTHING WORKS
all work on our phone, to what degree you would have too read the threads for each Rom. Start here http://forum.xda-developers.com/showthread.php?t=1699450
Then look here http://forum.xda-developers.com/sho.../RECOVERY/ROOT/GUIDES/HBOOT/RADIOS/TWEAKS etc

'Really work'?
Why not try out every rom and and give useful feedback(not "**** this rom doesnt work or this rom EFG is crap i am going stick with rom ABC).
If u just take some time to read a few pages after the rom was release u can know what works and what not(unless of course some ppl decide to post rubbish and useless comment in development section) which just doesn't help the dev or other ppl.

Define 'really work' !!! If it boots, it works ? Or do you want <insert feature here> to absolutely work as it is a must-have ? Or if you want a stable ROM, just don't flash any ROM that says 'DEV' or 'NIGHTLY' or 'EXPERIMENTAL' and stick to released ROMs (atm it is only GingerBread-based ROMs)

And you can find info on each ROM thread page in the dev section. Some teams even have a home page where they detail their current status.
Endymion / Reaper for Gingerbread roms or Ice DS / Miui v4 for ICS roms
Sent from my HTC Desire S using xda app-developers app
These are ROMs I've tested and know work OK:
Gingerbread:
- Reaper V3
- Endymion (with Sense)
Ice Cream Sandwich:
- Fallout V4 (Sense 4A) <- in my opinion one of the best and most stable roms out there
- ICE_DS (Sense 3.6) <- Also a really really really good ROM, everything works in this one
Jelly Bean:
- Andromadus: The only major thing not working is the video camera, the rest works just fine.
I've used all of these at some point and they work perfectly fine as a day-to-day ROM with no unexpected reboots or major issues.
Ice Cold Sandwich runs at my DS nearly without any bugs. (the ones present are some related to AOKP, not android itself).
Tnx all but i am sure that there must be more roms for our Desire S
that work 100%.
Please share more

As was pointed out to you previously - why don't you do your own testing and compile your own list to share with the rest of XDA? Or simply read the threads for each ROM and then you will know quite simply if they work 100% or not.
why dont all users of desire s list their roms which they tested here for all new xda members to easily decide which rom to use/flash.
List roms that have fully working hardware(cam,wifi,bt,....), because we need this kind of list.Dont u agree?

Simply because most of us have tried all the roms and have made our own decisions on what we prefer because everyone is different. Personally I've come to the conclusion that I don't like roms that work 100% because I get bored with it too quick so I like to test half finished and half baked roms

I use fallout v 5.0 the best rom
Sent from my HTC Desire S using Tapatalk 2
You're best off with CM nightly.
Other than that I'd suggest Fallout Evolution or Reaper
Well my Rom Desire XS works 100%, I now just need to add a few tweaks like APM battery percentage, and quick settings.

I am curious how people use the duel boot roms to their purposes
Here is what I think,
1. One for pure office work and one for pure entertainment
2.One with all the bloatware and one without
3.One for battery life and one for all tweaking experiments,
4. Have feel of different roms at once
and final,
5. Just to show off (like me ,I do not know what to do with it yet)
Additions please,
Thanks,

I thought it is possible by flashing with specific kernel only!

No opinion threads, flash different ones and see what's best for you. Also, this wouldn't even be the right section. This thread will probably be closed soon. Happy flashing!
Do you want customization?
Do you want stability?
Do you like sense or stock ics/jb?
Find out what you want in a Rom first. Each Rom here caters best to somebody.
Make a backup of what you have and flash away. Go back to what you had if you don't like what you install. That's the fun part.

I don't want to end up breaking my HTC and flash all sorts of feg ROMS. Can I install ROMs that are from 2012 etc?

No your device will explode. Lol anything from this forum should be fine as long as you have the dual core version.

1. Yes.
2. Yes.
3. Stock JB
I want slick, fast, and fun customization all the way form changing the boot logo sound to customizing the animation, and beyon dth at, a lot of good tweaks etc.
There is no "best" ROM. Everyone has different preferences, and uses their phones differently. Its like asking people what their favorite color is. They can give you an answer what they like. But it has absolutely no bearing on whether you will like it or not.
"Best ROM" threads are frowned upon here. This thread will be closed.
Closed. dang I want to be a mod

Hey guys.
What's the gain of using a custom rom over the stock one (Assuming rooted stock rom) ?
I'm kinda lost in all the roms available , so I was wondering if it was really worth it
Cheers

Battery life (if coupled with custom kernel)
Modifications -- some brilliant mods available -- Battery Icons, Themes, Menu settings etc
Cause you can :good:
-------
Using a custom Kernel with Stock Rooted and a few Xposed modules can be the same as a custom ROM most of the time though.. So give that a try first.
I have a lot better speed and battery life using Hyperdrive ROM with Beastmode Kernel. All the Touchwiz stuff (pen, etc.) still works, so yeah. Custom ROM > Samsung Bloatware.
I get between 11-14 hours with REALLY heavy use and full screen brightness and overclocked.

I have been trying custom ROM's and Kernels for many years..... I'm yet to find one that's worth the hassle.
Just disable the stock apps/bloatware you don't use and you'll get better { performance/battery life } than any custom ROM.
The only reason to use a custom ROM (IMO) would be for additional (required) functionality like additional fie system support etc.
I have personally had absolutely no good reason for the use of a custom Rom in years !.
I also don't feel like using custom rom over stock, I did many experiments with note one but with note 3 I would stay with stock rom.
Bloat wares are not bothering me, battery life is also decent so in my opinion leaving some extra utilities stock is better
Depends on which custom rom you choose. Some rom are good, nice and stable but others don't.
Sometimes I use custom rom because I wanna remove useless apps installed by carriers. If you find it not a issue, keep the stock one.
So if your phone is rooted then u don't really need custom rom isn't it well correct me if I'm wrong as I'm new to that android thing lol

It's not a matter of "need" Hyperdrive has given me better battery life (even after freezing all the bloat) and has a lot of customization. You can do most of it through Xposed, but all the really valuable things are in it already. I never found one I thought was worth it until hyperdrive.
Try one of the ROMs that look interesting, if you like it keep using it. If not, that's what nandroid backups are for.

If u know how to tweaks it urself, do modification to what u need, no custom rom is needed once u r rooted. Basically, once u r rooted u can do all system changes, IF u know how to.
But, assuming u r new, based on ur post, just grab any custom tom u like nd try.
