Because your dev needs to implement a camera app that support multiple lenses. Some Gcams support multiple lenses but a camera app from custom rom need to be universal, and not very phone hs the same camera module so it's better to take the main camera and use it.

Well an app with fast shutter is going to do you no good unless you know your phones camera can support that function.

I have tried few but then went back to my default ones on each device
I love the Samsung s6 camera app
There are few third party camera apps that have worked differently on my devices and it's pretty understandable as different devices have different camera sensors and the default camera apps are optimised for their respective sensors

As for portrait you should use google camera, which is way better in my opinion both in edge recognizing and quality (and it works for both front and back camera).
For B&W you can use Snapdragon camera (included in most roms), but i noticed it has some bugs with focusing, or FreeDCam, which should cycle and show B&W using the second camera (but it depends on the rom you're using).
As for MIUI camera you can get it to work on custom roms through some ports, but you'll get basic functionality and for sure no support for second camera. They're also old miui 9 versions, so they won't have portrait.
If you still want to try here are some versions to flash (remember to give all the permissions prior opening the app, otherwise it will say that it can't connect).
I still recommend to avoid using miui camera on this device, it is really bad with picture compression. Just use GCam for almost everything and you'll get awesome results, i even compared with my friends' mi 8 and the results are impressive.

Assuming you are on oreo-based rom (i'm on syberia and this doesn't work), just open FreeDCam and try to switch camera. It should show front camera, and changing again camera should show up the B/W sensor. I can't say it works for sure, i used to do it on an old unofficial rom (AICP based off old los15 sources), and it may still work but i didn't do further testing.
I asked to syberias' dev if he could look into that, hopefully we'll have working B/W sensor for third party cameras other than buggy Snap

Just curious to know if it's possible to change the default camera an app is using? For example, on my Xiaomi Mi 9T, it uses the zoom lense in Google Meet, which sucks as I do present stuff via Camera and actually would prefer to use the ultra-wide lense. Sadly, Google Meet does not allow to switch the camera used (besides from front-camera and first back camera)
Is there any app / Magisk module / setting to change the order of the different cameras so that apps first use the ultra-wide lense?

Try to add USB camera. Or connect web camera to computer or mobile. Now you will see two option. You can change default camera.
For that you need to root mobile.
Try Gcam mode software which are used on Google pixel.

1) Does NFC work Lineage, Evolution or similar custom roms?
2) Does Gcam work well(4K 60fps) Lineage, Evolution or similar custom roms? And does the Gcam add stabilization on 4K 60fps recording?
3) Does the fingerprint sensor work well with Lineage, Evolution or similar custom roms?
4) Are there any port of the Miui stock camera app for Cutom roms?

the choice of network is problematic on most of these roms, obliged to choose automatic network.

Currently the AOSP roms are under development, at least 2 years(+or-) to have a 100% functional roms.(Depends on xiaomi).
If you want a rom better than stock you should see to the EU rom.

1) Have read some, but haven't clued out which rom that is most stable and that works with most of my seven points in the list.
2) As long as it fix image stabilization on 4K 60fps, otherwise I can use the stock camera if it gets a full wokring port.

I have a Xiaomi Redmi Note 9 pro. I changed OS from MIUI to PixelExperience, but it was too buggy (although the cameras all worked), so I changed to LineageOS. Now, even if I install gcam (using gcamator) I can't get access to the ultrawide camera or the macro camera any more. I don't have ultrawide lens option in the app (even in OpenCamera). Have I missed something? Is there a custom app that will find my cameras? Is there a better forum to ask this question?

Camera is always an issue with Custom ROMs because stock camera is proprietary property, the developers that create custom ROMs can not use and do not have access to canera source to include in the ROM. Virtually all LOS ROMs have camera that doesn't work when the ROM is first released, sometimes the camera is fixed sometime after the ROM is released but often it never gets fixed. The only working solutions other than fixing it during the ROM building process is to try various camera apps from Playstore but it won't have your stock camera's features. If you want to use your stock camera's features, you need to go back to using your stock ROM.
