I am not a developer and I have 2 Galaxy Note Pro 12.2s that are on the AT&T network that I want to unlock and update to a higher version of Android. I am trying to get this done before school starts so my kids can use them for online learning. Can someone help me?

I tried to find this online and cannot find a specific list anywhere so I thought I would start on here. This will help anyone who is in the market for an unlocked phone or is just curious for whatever reason.
I run a small cell phone shop and am always looking this info up on certain phones. Some I already know, some I don't.
So if you know for a fact through personal experience of a specific phone or phones.. please respond and I will add it to my list.

Hello,
I had a Verizon Samsung Galaxy Note 2 that had recently developed bootlooping problems and I used USPS to send out to a store. The store called me today and told me that they had received the package but there was no phone inside. I am ready to give up and buy another phone. I liked the Samsung Galaxy Note 2 and don't want to pay for any of the latest models. Unfortunately Verizon has discontinued Note 2 and I was wondering as to which phone would come closest to the Note 2 in specs. Most important for me is the 5.5" display. My phone was unlocked and I am not in contract with Verizon so if I find a phone that matches the Note 2 specs I might even switch carriers.
New to xda and adroid alike. I have several devices and not just android so i have a proposition. List of devives at end. If someone can walk me through the complete process of rooting and installing custom roms and everything else step by step from beginning to end on one of my devices then i would offer one of the others up for trial purposes as long as whoever tries their very best not to brick it as warranty will be out the window of course. Almost all are still under warranty and most are rather expensive.
The at&t s7 edge is what i would like to root but may be better if i learn on something more practical and less expensive. I am pretty open EXCEPT the to s7's are off limits u til i am positive whoever may take me up on this knows exactly what they are doing. I really dont need any bricks as my house is wood and vinyl.
Here is what i have from cheapest up at least in what i see in them.

As you can see i have a couple and always picking up others if i can get a deal on them. The s7's i think i want to wait on unless i can find some spares reasonably priced but just about any of the rest should be fair game depending. Like i said teach me, and experiment all at the same time. If there are more than one person/people that want to take me up on this then maybe we can work something out or ill just have to choose which to do. Endgame is to be able to without hesitation be confident enough to pick up any android and do whatever is possible with it, i mean isnt that what androids are all about?
