When you remove an application all the data used by this application willl show under "deleted applications".
Or maybe you have backup enabled in settings.

Mystery Data Usage

My data usage shows the majority of my data coming from "Android OS." Is it normal? Can I limit it?

Stripped it down and reinstalled the rom. No issues since. I think the culprit could've been youtube music but no way of knowing for sure.
