I never personally had it screw things up.. it always just ended up disabled. You can use the RUU i linked above to upgrade without any issue. You will just need to flash TWRP and supersu afterwards.

After disabling xposed installer and all my modules, updating 4.4.3 to 4.4.4 then to 5.0.1 everything works fine until i load lollipop. I get to the main screen and a message saying "Unfortunately, the process com.android.phone has stopped" I hit ok and it keeps popping up, and i can't log into my phone?

Run the s-on ruu I posted. It will fix that. Then flash twrp and supersu.zip in twrp to re-root.

Try any stock ROM and see if it works.
Make sure as it is very very important to wipe off your data and system partitions before you install a ROM.
Once your stock ROM is working, download any ROM update app from market and install the ROM you want.

You can flash the recovery alone. You'll be able to get ota update, this is assuming you're unrooted and system is not altered in anyway.
You don't have to relock your bootloader either.

I guess you could try to boot into TWRP --> Wipe --> Format Data --> Ext4(if it asks)
Or try to re-install stock firmware with some official way or in TWRP by following this guide https://forum.xda-developers.com/honor-4x/how-to/install-emui-4-1-4x-4c-g-play-g-play-t3515702
