So I have an HTC Titan and just saw an update available notice on my phone.
This is the second update available on my phone. I applied the first update last month and am now os version 7.10.7720.68, firmware revision number 1600.2200.10902.401, bootloader version 1.8.16001S.3(132000).
Should I stay away from this update if I want to wait for an interop unlock.

I just recieved my Titan and I seem to be on a later version of firmware and bootloader. Unfortuantey I have not been able to get interop unlock to work.
Other than that I have not real basis for comparison other than the fact that it is an awesome phone ...

Is it me, cuz im not seeing the 'desire s' listed on the htcdev.com as an option to unlock the boot loader?
All I want to do is root my stock Rom. Not interested in trying any other roms.

It's not listed but it works. Just select the bottom option "Other Supported Devices" and follow the procedure
Does this procedure get around s-on also ?

No, your device will be s-on, but the bootloader will be unlocked. It's almost the same.
I have no clue why they haven't listed it either.....

Look for SuperOneClick in here, it will easily root your rom

I unlocked the bootloader via htcdev.com (operation was OKAY).
SuperOneClick 2.2 hangs at step 7.
I'm guessing that you have a hboot 2.00...
When u used HTC.dev to unlock your HTC desire s you need to Install cwm or 4ext and then you can flash any Rom you like.
After flashing your HTC with the new Rom you need to fastboot the boot.img to your device cause your device is not S-off.
An other option would be downgrading. Do a few searches and you will be fine.
Otherwise post back and I'll help you out.

"dtronics" suggests 2 operations to do for s-offing for the Desire S :
1 - unlocking the bootloader (htcdev.com)
2 - using SuperOneClick 2.2
The second treatment hangs at 7th step.
Without downgrading the hboot (2.00.002):

I unlock bootloader and root, install recovery, then it deletes all contacts and file in internal storage, not delete file in sd card
In the drop down list choose other supported phones

What's better to do if I want to flash roms, htcdev unlock or S-OFF? I mean, do I have to do both, or just one, and what's better?

I would choose downgrading if necessary and S-OFF. The main disadvantages of the htcdev method are the loose of warranty and the need to flash manually the boot image every time you change the rom.
I personally like 4ext but CWM is also very good.
Next time you need some info gry to search the forum, this things were allready discussed.
As a mather of fact i don't think there's a thing left undiscussed in here.

Nope. . . Never loose carrier freedom after update
Before updating , I recommend get s off now in case if u want flashing in future .
Coz getting s off on ics ( include wire trick ) is verry difficult than gingerbread. .

Unlocking bootloader after achieving s off is not necessary
Update as it is , u can switch to eng bootloader anytime by flashing zip
Use kgs utility for that

There is no way to root the HTC One without unlocking your bootloader. Also yes unlocking your bootloader will wipe all the data off your phone. About future updates as soon as you go back to your stock rom everything will be back to normal and you can get the updates. Some apps and features will not work because they need things like frameworks from the HTC Sense roms.
As long as you don't go to a custom rom all your feature should work but installing a custom rom is part of the fun.

Are you able to boot into safe mode/ fastboot/ Recovery?
Try to restore your backup.
Able in safe mode but my backup is deleted during windows reset
