I've done a search but can't find an answer or a solution that works.
One of the many faults with the Z3 happens to be missing 1080p playback in youtube app.
Anyone have a working fix or an idea of why it doesn't work. Contacting Google is a joke.

Not a Z3 fault, it's YouTube App's fault. It is also happening right now on my Galaxy tab S, plus there are a lot of other people complaining about the same (read the Play store reviews) and all of them are from different models.
There was a way to fix it, I even did it when I first got the Z3, but after latest YouTube update it stopped working and the fix no longer works. It was to clear Cache and data from YouTube app, then disable it, then go to PlayStore and Enable it and download latest Update. Doing this always seems to have fixed the issue with My galaxy Tab S and the Z3, but like I said above, it no longer works, so now I have a Galaxy Tab S capable of watch up to 1440p YouTube videos and can only watch up to 720p videos.

So I've had my Tablet Z for just about a month and the only real complaint I have is the YouTube app video quality is pretty bad! What little setting adjustments there are don't do anything to help. It looks like my player is playing lo-res 480p video on an HD screen even when HD is highlighted as the play option.
Netflix, Sony Video player and inline/embedded videos all look great so I know it's specific to the YouTube player.
Hoping that the update that's due out this week will alleviate the problem, part of the update addresses the YouTube app. I didn't know that manufacturer's had their own versions of the Google core apps, learn something new everyday.

They don't have their own version of the apps. They can't. Youtube, like many other apps, is closed source. The fix includes something in the file system related to YT, but not the app itself. I guess the update is related to videos most of the times stop working in the middle of it for no reason. Embed with a browser, and other apps, work just fine.

Check out the app called viral it solves the problem plus you can use it in floating mode or minimize it to play while screen is off when I started using viral it could go to 1080p which looks gorgeous on this device but for some reason I can only choose up to 720p but it's not tacky like it is on the official app

I think it runs at least 720p on supported videos... I think there is a hack to force use 1080p, not sure...
So I uninstalled the most recent update and the video quality dramatically improves! I'll stay with 4.5.17 until they have another major updates.I'll miss some of the cooler navigation features of the new version, but is rather have the picture quality back.
I'm surprised I'm there's only one this affected.

You're not the only one.... Same issues here, as well as on my dad's XTZ and my Nexus 5.... Seems like the new version of the app doesn't upscale from 720p to 1080p very nicely at all.....
Whenever I attempt to load a video for an app in the play store I get "Connection to server lost". Its particularly strange because I am able to view movie/tv previews in the play store, youtube, and other streaming video without an issue. The problem seems to be specific to videos for Apps and Games viewed through the play store. Not a huge deal but still kinda annoying. Anyone else seeing this problem?
Btw I applied the OTA and rooted with towelroot.

Yeah I'm having the exact same problem on mine. Good to know it's not just me. Hopefully they fix it soon.
same issue here. the video starts to play after i hit retry a few times. not too concerned with it right now but I'm hoping they fix
I got it too, guess it will be fixed in the next update. New toy, new bugs.
Same issue here as well. I also can't play YouTube videos from within other apps (Tapatalk, Reddit Sync). They give me the same error. I can play them if I open them in the YouTube app though.

I'm used to this issue on my 3 months old Galaxy Tab S, it has never worked as expected showing the maximum 1440p resolution until you clear YouTube cache and data, force close it, disable it Uninstalling updates, once this is done then you go to Play Store and look for YouTube, it should shows Enable, and one you enable it, and update to latest version, then you have your full resolution options including 1440p. Sad thing is that everytime there is a new YouTube update we need to do the same again.
I did the same steps on my Z3 just to see that it didn't work, so I went back to apps and saw that there are 2 more apps directly related to YouTube, I already have disabled Live On YouTube as I tried to use it and never weekend and then I realized that I'll never use it again. Anyway, I decided to do the same steps mentioned above but this time I also disabled the 2 YouTube extensions that are there, went back to the Play Store and Enabled and updated YouTube and when I went back to the app there are all the options including 1080p, one thing though, it seems to not stay skeeter by default, just select it and then re-start the video and you will see it on 1080p.
I re-enabled the 2 YouTube Extensions back just to see if it breaks it again but it seems that it still working so that's good news.
I hope you can fix it with this information, at least until the next YouTube update.

On my D6633 with latest Custom HK firmware, there are 2 apps named, YouTube extension and YouTube Karaoke extension in addition to the Live On Youtube that like I mentioned was disabled already.
There was a Youtube update last night, for my surprise and contrary to my Galaxy Tab S, the 1080p settings survived. So even better.
Sadly after Tuesday's update it seems that this is no longer working, just like it happens in my Galaxy Tab S. I've been doing the same steps I've done a lot of times now and what I described above and this time is no longer working, Highest resolution I can choose from now is 720p. Really frustrating...

So I'm on a stock 5.1.1 and updated to the latest Google Photos version, which I think screws with my devices HW acceleration. Basically , after updating I can't watch any HD videos without the frames stuttering, the screen sometimes blacks out in middle of viewing videos as well. Searching around I found that more people experience this, but it isn't that widespread. The problem goes away if I revert the update. Any help for additional workarounds would be appreciated.

I was able to find another solution to this. With the latest photos app running, I went in to developer options and switched from NuPlayer to AwesomePlayer making things working smoothly again when playing videos.
If anybody can check what player they're running after updating the app and tell me if they experience video playback stutter with it, I'd appreciate it.
Seems like Google switched between default players on the different OS updates, I'm wondering if they've done the same and it didn't register or something.

This worked for me also. Nice to see confirmation.
Having received my Galaxy S7 SM-G930F yesterday in Switzerland, I ran into an issue with YouTube.
Namely, 1080p60 quality is not available within the app.
Update: 1080p60 now seems to be available, most likely due to YT backend changes. 1440p60 is still missing.
If a video is not 60fps, I can select up to 1440p.
However, in case of 60fps videos, the highest quality available is 720p60.
Obviously, this is highly irritating.
As far as I understood from searching around, it may be the case that YouTube has not (yet?) enabled support for a particular model, though I cannot find any mentions of this problem for S7. Perhaps it has to do with the fact that "main" launch happens later on 11.03.
So, questions:
1) Anyone else experiencing this?

seems like everybode have this problem, prob just an update since the S6 can do this I see absolutly no reason why the S7 shouldent be able to.

I have the exact issue. I think YouTube has to release support for these models, which is weird...but I guess they haven't done it yet.
Okay, so, so far the issue has been reported in the following ways:
1. Directly to Samsung support.
I have received a reply, that deflects the issue at Google:
Youtube is responsible for their app and the stream quality of its videos. Therefore we cannot change the settings.
Unfortunately we do not have any information about upcoming updates for the Youtube app. As it is a new phone, it is possible that there software cannot be fully used on Samsung Galaxy S7 yet.
If you contact Youtube directly, they will be able to give you more information about upcoming updates.

Obviously, no response there, but hopefully not null-routed.
3. Through YouTube support forums.

No authoritative response there either, but that might happen.
This problem needs more visibility if we have a hope of getting it solved.
Don't hesitate to contact Samsung support until they see it as a recurring problem, and use the Feedback feature: very low effort on your side, blip on the Google's radar.
Quick update, F/W update to G930FXXU1APC8 did not change the situation. Seems like YouTube app itself needs to address this.
Quick update, YouTube app update to 11.10.57 did not fix it, including wiping data and restarting.
Update: now the issue seems to be at least partially fixed.
1080p60 now plays for me, but not 1440p60.
Well, it's an improvement nonetheless.
Since the app did not update in the interim, I can only assume changes on the YT backend.
Xiaomi Mi 4c (2/16gb) here, same issue not being able to select higher than 720p60 if the video is in 60fps. 30fps will display at up to 1080p (max native resolution). The thing I find real annoying is that this has only begun to occur as of updating to 12.14.56
Exact same problem as you benjamin. [email protected] is fine but 1080p is only available in 30 fps or not.
Same issue on LG G3
But 1080p 60fps was available before, it seems to occur after some update
