When I open one of my contacts to text the words "I guess." Automatically populates. What's up with that?

Check your draft messages. I had this happen to me, and after I deleted my draft messages (the "i guess" message was in that group) it stopped adding that to the new text.

Not sure if the stock Messaging app can do that. But GO SMS Pro sure can do what you want.
