for now is only 2.1 eclair official rom,2.2 froyo only custom rom pls do seach in this forum

yes you can now ,sony had given 2.1 officially,but i prefer 2.2 although has no stable version. still stay for 2.3.

2 methods-
1. Root your phone and flash a custom Xperia8 gingerbread ROM (am not sure if there is a gingerbread ROM out for Xperia 8 yet)
2. Wait for the official 2.3 update
