So, i'm "new" too.
First thing, you did send your message from a Galaxy Ace so in assume that you want to play with it?
you can search for your device in the right top of the page, there you select your phone and go with the banana (Dutch xD "gaan met die banaan")
http://forum.xda-developers.com/forumdisplay.php?f=1164
That's the board for your phone. There you can find threads about new roms, themes, apps, etc.
As i read it you woud like to have another ROM, now for every device there are steps to follow, i suggest you to take a look @ the board for your device and look what you would like to put on your Ace. in most cases the steps are all in the ROM's thread, and feel free to ask someone if you don't know what you are doing. Anything is better than making a brick.

Michel

Hi,
If you just 'flopped' on those rom's and kernels, you where very lucky not to have an extra stone in your house.
The best way to learn things is to make mistakes, i am not a Pro either messed up two phones, but you'll learn while doing that...
Always check your system settings like kernel, hardware-build etc. example: a Galaxy Nexus is not just 'a Galaxy Nexus' there are a lot of differences between them, even if they look totaly the same. So if you don(t know what u are doing just ask someone, it won't hurt you or that person.
I know some people over here can be hard to newbies (n00bs) that's just the way it is. Imagine you are asked one question 1000 times a day... you'd be the same...
Your OS is (normally) ALWAYS Android
Your kernel is your "chassis"
Your ROM is the "engine"
If there is something where i can help you with i'll be there

Yes, as Zelendel said, there's no fast and easy way. Only slow and steady members wins the race. But if you want to tweak or theme your ROMs, try getting used with Android Kitchens, that would be a nearest bet for doing it the painless way.
If you are looking for building ROMs from source, then first of all read as many tutorials available, and then try doing it. You won't be 100% successful in the initial times, but you can improve gradually.
About Kernels, I pretty much didn't get you how to write your name in the boot! If you are talking about the boot splash image, it could be changed with dsixda's kitchen I believe.
