Gingerbread is Google OS (2.3 specifically), TouchWiz is an overlay to the OS that Samsung makes.
Can't compare them at all..
I personally like the Gingerbread....both from a design and a UI point of view.

Just so we're clear.. Gingerbread is the OS, TouchWiz is just a skin on top of the OS..
I rather have the pure Gingerbread OS without the Touchwiz overlay

I didn't see this posted anywhere so figured I would share. Modaco, has released the stock Gingerbread launcher modified for Android 2.2 in the market. Search Modaco and you should see it.
While it lacks the features of ADW and LPP, it's buttery smooth and very fast. The green actually looks pretty good as well IMO. Give it a shot, I think you'll be happily surprised.

I personally have found myself using Enom's custom launcher a lot more lately. Sometimes less is more and this thing is smooth as butter like you said! Thanks for the find and I think I will use this for a while and I was waiting for something like this to use on CM6.1 but couldn't port Enom's over.
It would be nicer if it had the 3d scroll like the stock nexus launcher

I agree however this was just a quick and dirty port. I'm sure within no time there will be custom launchers based on this that will incorporate many other features like 3d scroll.

The Gingerbread Launcher only has 5 screens by default. Any way to add 2 more screens for a total of 7?

Well, the dockbar looks like it has GB icons but the notification bar doesn't. Id say it is themed 2.2.

There are convincing-looking (and free) Gingerbread launchers in the marketplace. My Galaxy S 4G has looked like the one in the post, but certainly isn't running 2.3, and I suspect that's what we're seeing. Whether it's deceptive or just a poor understanding of what Gingerbread is -- that's another question.

Launcher pro has the 3d launcher. I am running 2.3 on my vibrant right now. With touch wiz 4 . And doesn't have 3d app drawer.

No, true TW 4 for some gestures requires the new hardware that supports multi-touch, and uses the gyrometer for tilt.
It's just TW4 without those features.
Theme
I am making a full GB theme, the problem is that I can't change the fon't colors at the menu because apktool never recompiles framework-res, so I had to keep the same old popup menu. Other than that, it is amazing

Do you mean the stock gingerbread launcher? I only have a flashable zip that removes the ADW launcher in CM7 and replaces it by the stock launcher: http://www.mediafire.com/?ru552c3njx7fkf1
I guess the update-script has to be changed in order to remove the sense launcher.
No he means the endless scrolling app drawer on sense 2.0 (froyo) not the paginated one on 2.1 (gb) I don't think you can just have the drawer you'll need to rake the entire Rosie and port it. I seriously doubt a Devs going to do that though. Sorry mate

There are a lot of roms for NS, starting for CM7 based roms, MIUI, CM9 alpha, and well take a look on the developing section and test the one you want..
Wait a few weeks they're almost done with HTC Sense.

You're saying "UI"... do you mean "Launcher"? Because you don't need a custom rom to change the way the phone looks. There are lots of them on the market, just to name a few I've tested:
-ADWLauncher EX: smoother than regular ADWLauncher, highly customizable, worth the purchase (for me at least, runs great)
-LauncherPro: also very smooth, pretty customizable
-Go Launcher EX: can't say I loved it too much, but also nice looking.
Take your pick. Hope this is what you were searching for, a replacement LAUNCHER, not a replacement ROM.
I don't mean the launchers.
I mean different transitions, icons,statusbar,notification and etc like the full framework has been changed as you see in MIUI Rom

The MIUI ROM is still based off of Gingerbread and hides it really well. Though most of it is recognizable once you see past the themes and skins.
If you want a list of different ROMs, some of which sport their own framework visit the Nexus S ROM thread
here.
Also as flodb113 pointed out, essentially you are looking for a different launcher. ADWLauncher is a good place to start off if you're not looking to flash a new ROM.
The ADWLauncher contains themes which can change the whole appearance of the UI including: transitions, icons, statusbar, notifications and etc.
But isnt a UI called RoUI available?

If you are referring to this then it only allows you to customize the lockscreen. Which is similar to changing a launcher; no flashing required.

Miui is available for the NS and NS4G, just flash it.
Not sure why you chose the Nexus if you're looking for a flashy interface... The nexus was designed as a vehicle for the bare bones, no frills aosp android experience.
After using it for a day I just could not accept the tw launcher and had to install ics launcher.
Just wondering if anyone has found the touchwiz launcher useful and if so why?
If you ditched it which launcher did you go to?

It's not a terrible launcher.... Just boring. Not very customize-able. I have and will always use an aftermarket launcher. AdW eX to be exact.
I am using Nova Launcher. I have had no issues with it so far.

Even though I dont have ICS yet (****ty Rogers), I definitely agree with hawk
I was looking for a nexus experience but didnt want to get a galaxy nexus.
Thats why i would recommend Nova Launcher, Ive watched enough videos
I'm neutral, just looks like plain old touchwiz to me. Like the one we've always had, And I think we expected that. But with the added multitasking features And other added features its beem a pleasurable experience so far And I'm thourghly enjoying it.

I just grabbed some AOSP .apks and shoved them into an early alpha #-8 preview of NexusMod ICS...i'm working hard on making this look vanilla

I ditched it for Apex. Much nicer.
I've always used launcher pro, so i'm super used to it. I just have it set up to have an ICS feel to it using this guide. I've had this for a while now, but now I actually have true ics

Yea, the touch whiz completely ruined ICS for me. I had ICS running on my Inspire 4G before I upgraded to the Skyrocket, which was aosp ICS. I could definitely see all the differences straight away, and was quite underwhelmed by the ICS leak. I think some of the best parts of aosp ICS are missing. I used apex launcher for a while to try to make it a bit better, but in the end, went back to my NexusMod 4 backup.
Looking forward to some vanilla ice cream goodness.

I think its a race right now between a few of you guys to get an aosp style rom puahed out! I really appreciate your guys' hard work!
I've just recently started looking into rom development myself and if I thought I could help yet id offer but I'm not there yet. Keep us posted on how you're doing! I know I'm watching the dev section like a hawk!

The launcher, app drawer, and settings menu are the biggest changes. Some other little things like icons are changed too though.

They also hobbled the lock screen. AOSP ICS allows for many music players to have controls on the lock screen. Samsung only supports it's own music player to have controls on it's TW lock screen. I just don't get it, why take away features?
On top of that to still not add a widget (since you are forced to use the stock TW music player to have lock screen controls) for the TW music player is just stupid. Makes you wonder how thought out TW is.
