This is a newbie question, but if I decided to install a new rom do i lose all my settings and programs installed?
For example, if I go from TNT's rom to an SNN rom would i lose all my settings, contacts, and programs?
If so, can i avoid this some how?

YUP!
Changing Rom means complete change of OS,it'll replace the present OS and delete all the settings/contacts and programs,but however,some programs/applications,which at present in your phone, might be already included in the new Rom you flash.
Well,yes!you can save your contacts and messages by backing up your present contacts/mssgs to your pc with a back up program ' PIMbackup' and after flash of new Rom,they can be moved back to your phone again.

[Q] New ROM, how to avoid "left-overs"

Alright, here's what I have:
- Desire with stock Froyo/Sense, rooted (did it with unrevoked 3.21, the newer ones don't seem to work for older desire)
- It is an old desire with only 0.5G memory
Here's what I want to do
- I run out of space all the time, so I want to install a gingerbread-based ROM and use app2sd+ to put as much on the SD as possible.
- I h8 facebook. I want to have a ROM where I can remove it or where it isn't included.
So, Oxygen, CM7 and ReDux seems like good alternatives.
What I worry about:
- When I install a new ROM, old junk from previous ROM will be left and take up space on the internal flash memory (like it does on a windows pc).
How do I avoid this?
I really want to wipe *EVERYTHING*. It is easy to reinstall what I need.

Sense is pretty good. Will miss it. Any suggestions for launcher with a similar feel?
In recovery, you should wipe data, system, cache and dalvik cache.
While do not know the specifics of your device, I am familiar with Cyanogenmod. If you want to make sure that there is no cruft from prior installs, then you need to wipe /system before applying the rom. That will make sure that nothing gets transferred over.

Rom cleaner will install apps backed up with Rom cleaner backup tool. These tools look like they r for sense Roms. I'm not looking for aosp only but something for the flash-happy fools like me (i know ur out there ) who flash between sense and aosp..
Looking to back up non sense apps that work on aosp and sense. Like titanium backup but flashed through cwm to install apps before 1st boot to avoid most of the google acct. Downloads on setup. This way little data is used and google stays sync'd between sense Roms and aosp.
I think this is doable..

You can use ROM Cleaner tools even on no-sense ROMs.
If you wish to not delete anything just create an empty text file called romcleaner_user.txt put it in /sdcard/ROMCleaner and ROM Cleaner won't delete anything, it will only restore all apps located in /sdcard/ROMCleaner/firstboot/data/app/
Use backup tool to backup all your apps first.
Then flash ROM Cleaner.

But how about the previous Build ?
For Build1 -> Build2, I didn't wipe or anything else. It went good. But I don't know if that's the proper way to do it. (I met some gmail crashes since, related ?)

A dirty flash should be fine since many aosp roms have an updater script. I never wipe whenever I'm coming from a previous build of the same rom. just follow the instructions for advance users. If you run into any problems then follow instructions for most users.
i would go with the " For Most Users " option as most users would be coming from build 2 or build 2.5 .. i also would recommend a full wipe , even though its not required i have found to have the best experience & fastest speed on my device by backing up and doing a full wipe so as to have a fresh install on the device.
I'd recommend a clean install because you don't want any problems after a dirty flash

By doing a full wipe I'll lose all my apps and their data. So if I use (my common way these days) Carbon for this, for "copying" apps and data, even if I did a full wipe, that's not a fresh and clean install at the end , isn't it ?

Just use free version of titanium backup so when u reinstall the apps the data will be put back.
Just make sure u backup the Google stuff before u wipe and flash.

[Completed] Is it necessary to install the full ROM zip in order to update ?

My question here is, in order to update the custom OS,say RR OS, is it necessary to download and install the full size ROM zip and gapps every time???

Depends on what you want. If you want a clean install, actually only for big updates, yes you must install from scratch with wipe all and flash both zips (ROM and GApps).
If that updates isn't so big you can flash only the zip of ROM wiping cache and dalvik.
