Just 1 thing, for debloating, is there somewhere I can get a list of apps that are safe to delete, and apps that should never be deleted ?

If you're looking to skip the Chinese invading your privacy, or not having to start up a PC just to use ADB you should try MTK ADB which gives you full ADB on your MediaTek device running Android 4.x. This was made to prevent the rooting process that clogs your phone with so many weird files that a total unroot is near impossible, resulting in a brick if you mess with the wrong binary or update your device which is actually really easy now that root apps replace system binaries with theirs to persist root when the binary gets run by init. MTK ADB makes no change to your device files whatsoever. It also allows you to get Root ADB on some devices (about 2 in 5, depending on manufacturer), all devices can get Shell access (Regular ADB).

only by manual method such as uninstalling / with adb shell command (usb debugging)

Does anyone have a list of safe to remove Xiaomi apps? Like, apps I can remove without breaking any of the functions the phone has.

you can just install xiaomi.eu, it is debloated edition of miui
This is all i found that could be removed without bricking, make sure to NOT uninstall com.miui.securitycenter as this WILL end up in a bootloop

sorry for the late response, no. as far as i know it won't break anything but maybe themes or something. you can always do a factory reset and uninstall one by one

Tip: You can also install mistakenly uninstalled package using command:
adb shell cmd package install-existing <package name>
How to Debloat Xiaomi without losing data/rooting ?
For better performance and battery life you need to uninstall those useless app from your device.. Here are the steps to do.
1. Install ADB Driver to PC
2. Enable USB debugging and connect your device to your pc.
3. Check your phone is connected to ADB drivers
4. Install Java SDK
5. Download and launch latest Xiaomi ADB/Fastboot Tools
6. Uninstall all the bloats from the official software
