Try flashing different GAPPS if google assistant doesn't work.
Did you download the correct img got AOSIP?
if yes, flash the img again, boot to twrp and perform a factory reset and try rebooting the phone
Also flash magisk and try if it doesn't work again.

Instructions to flash GSI will also be most welcomed like which vendor,boot,kernel and Gapps
I Installed DotOs and it booted but after flashing nano gapps I get error google play services stop repeatedly,Tried to clear cache in gp services but it did not fix the problem.

u can try install gsi q roms with this instruction and tell us woks roms or not. Maybe need wipe all data, because custom roms not support decryption

i try to flash viper os gsi rom arm64 A ONLY AND HAVOC OS 2.9 and it want boot
TWRP SAYS ; no os installed are you sure you want ro reboot
do you know what does it mean
It does not matter tried rebooting it?... Well I have MiA1 and it also shows no os installed but the os do get installed

M30s architecture is ARM64-AB, you can not use ARM64-A, i have tested many GSI rom. Havoc 2.9 is not work on Android 10 but you can use havoc 3.5 on android 10. Visit this Channel https://www.youtube.com/channel/UCRXE-DlYIbCzLLKYAgpRrEA/

Next time please read the instructions posted by the developer instead of flashing it without any consent.Of course you can't flash because your twrp is outdated.
1.Use lineage recovery.Flash this from twrp app.
2.Update to twrp v3.4.0.0
