I just installed Google Pay in order to verify it still detects root and refuses to run, however, surprisingly, it works.
I have a magisk-rooted Droid Turbo with custom ROM and xposed framework, so it cant get any worse. Can anyone confirm this?

Google pay is easily fooled.
But i do no attempt in fooling it (i would not call it easy either), it still works.
It was not working for me for many days. I tried different OREO roms on my S7 Edge. (TGP 2.5 and Superman 3.0.1)
I used magisk 17.1 with magisk hide for Google Pay. I also used the magisk module (props config) to change the fingerprint.
That allowed me to add my cards but I was stock at "unable to verify card". When I pushed "verify card", the screen display briefly the little blue bank logo then returned to previous screen without error.
Even when I removed magisk completely, was unable to make "google pay" working...
But I just discovered your post and tried it then VOILA, it works this morning

So, Some days ago, out of the blue I was trying to pay with google pay and an error "you no longer can pay at store with google pay" came up.
Then I check payment methods, tried to change for other and found the error that google pay wont work on my phone since is "modified in some way"
I have 100% stock room, with magisk root. I did not installed anything recently, not even updated google pay app recently.
Anyway, I read some guides, found that my phone did not pass the SafetyNet Check. cleaned data from google play services and google play itself. run the test again and now it says true (pass) and my google play says device certified, but still no luck with google pay. I hided root for that app and other google apps just in case, cleaned data, but still says same error.
Any thought? Something that I could try?

I had the same problem, ended up fixing it by switching to Magisk Canary release channel. AFAIK the fix has not been released in stable Magisk yet.
I can confirm that Magisk Canary Channel (v19003) fixed this issue for me on OP6.
After bouncing between several different GSI and non-GSI roms, trying to get the right mix of NFC settings, Magisk modules, and bluetooth hacks to fix the issues those roms all seem to have with both GPay and either BT media and/or calls, I've swallowed my pride and accepted that I may not be able to get rid of MIUI on this phone. So...
I used XiaoMiFlash to put the Global 10.2 stable rom back on the phone (the hardware is global, a black 6/128, and this is the rom it shipped with)
I used MiUnlock to re-unlock the bootloader
I set up the phone as usual (restored SMS, call history, & settings from Google backup, but not applications)
I installed Google Pay from the Play Store
...and trying to add any of my cards ended with the message:
"Couldn't finish setup to pay in stores
This phone can't be used to pay in stores. This may be because it is rooted or altered in some other way."
It was, in fact, NOT rooted at the time.
After that failure, I flashed TWRP, and the latest ianmcacd Magisk & Magisk Manager, verified SafetyNet (passed), selected Google Play Services and Google Pay in the Magisk Hide settings, cleared all stored data for Google Pay, deleted /data/data/com.google.android.gms directory from within TWRP (as recommended in this thread: https://forum.xda-developers.com/mi-mix-3/help/google-pay-issues-t3871186/)
Still no love. Got very sad, got in my car to go for a sad drive in the countryside, paired bluetooth with my car stereo so I could listen to some sad music...
But I cannot convince the phone to play media over the BT connection -- calls work, however.
Have I completely borked this phone somehow?
Check the bluetooth and wifi mac address, i'm afraid some of your partitions is broken.

I got my phone yesterday and added my card successfully in Google pay. Tested it in two different stores today with contactless payment, but the terminal didn't even react.
I tested the nfc on my oneplus against my old huawei and at least it tries reading it, so that means the nfc is working I guess.
Have to add that I was using Google pay in these stores before with my old Huawei with no problems.

I changed from SIM1 to Google pay in phone settings to make it work.
I have tested it 2 times, no problems. Phone was unlocked , display on
I tried to pay with Google pay twice yesterday. Both times the phone recognized i was trying to pay, but the payment did not get through. Tested with PayPal and CC both times.
Btw i am curious to know wether i have to open the power menu everytime i want to pay? Or does Google Pay still work from every screen?
Works for me everytime, although it says "not set up"
Worked for me when my BL was locked, working fine with unlocked BL and root. Even paid today.

You need to Magisk Hide Google Pay. While you are at it hide root from everything Google.

I did. Still no work
Ok, strike that. Looks it's working now, but only after restarting the phone. Safetynet failed before restarting and now it passes.
Did some more testing today. Tried for an extended period in the store today with no luck. It's not even reacting. Phone is not rooted btw and I unlock the screen when I try it. I try to open the app when doing it also.
I tried pairing my headset with nfc and that works flawlessly.
So weird

I too, am experiencing issues with Google Pay. At first, I thought it was my bank card needing my bank to ok it for Google Pay on the new phone. But then my Walgreens points card didn't work either-so it's definitely NFC or Google Pay oriented. I have everything setup correctly. How annoying and weird...
Changing the settings from SIM1 to Google pay made it work, so problem solved!

Re-flash Stock ROM to get rid off of all modifications you applied so far.
Then Google Pay should work again.
I have been using Google wallet all day today up until 45 minutes ago. I have just tried to pay for something in the shops and now my phone says in the wallet settings that 'I do not meet the requirements'
I have lsposed, latest magisk, shamiko, changed finger print sensor and fingerprint, I have xprivacy lua blocking wallet and Google services, I have configured deny list to include wallet.
All banking apps work fine.
I have run root beer and it shows SU BINARY not hidden 2ND SU BINARY CHECK not hidden ROOT VIA NATIVE CHECK not hidden and MAGISK SPECIFIC CHECKS not hidden.
YASNAC Pass Pass also.
I'm at a complete loss at the moment as I just can't figure it out?

I have same problem with Pixel 3. Google Wallet stopped working last month out of the sudden, and all banking apps work perfectly, and SatefyNet check show no problem.
I get "not rooted" with root beer when I add it to DenyList in Magisk.
Have you figured it out?
