Is there a way to disable fingerprint to unlock device (and use a pattern/password/pin to unlock the phone) and still be able to use the fingerprint in apps?

To my knowledge, that is not possible unless the app itself has that feature.
However, you can use an app that provide fingerprint lock to your apps.

Gesture Lock is not present in CM11 Roms.
You Need To Flash CM12 Roms.

Please bro I have tried Lineage Os pie but fingerprint doesn't work you said that in lineage Os u can use fingerprint or face lock have you tried that and got fingerprint working please help me ..

In realme 5 after unlocking bootloader your screen lock will be disabled and you can fix it by locking your bootloader again.
