QuicKPic -- Because stock Gallery just sucks so bad.
Ghost Commander -- Every OS needs a file manager, and this is one of the best. Great for rooters, too!
Wuala -- Like Dropbox, but with decent security features.
Android Central app -- Duh! Keep up with your fav devices and Android rumors on the go.
Hacker's Keyboard -- Awesome general purpose keyboard. Extra-must-haavy if you are on a tablet.
More:
CPU spy,
Writepad,

Super User / SuperSU - the most important.
Your phone is gay without one of them.
I'm learning Russian and German so Dictionaries and Google translator are my favorite apps.
Google Authenticator - Now I can sync my passwords without worrying.
Google Plus - I don't use Facebook.
and Google Finance.
Apart from what's already been mentioned above...
Just Pictures - I have my local, facebook, picasa and deviant art photos all in one place.
Pulse - much prefer this to Flipboard or currents as you can see more news stories at a glance and decide which ones you then want to read, instead of having to flip through each story individually.
Freenote+ - my go to note taking app
Dolphin Browser HD
Whatsapp - hardly send any sms messages now
Picsart
Pro HDR Camera
Caustic - easily the best Android music sequencer
Audio Evolution - easily the best Android multi track recorder
Tape machine - the best app for playing and chopping audio files
Loopstack - hours of fun. the best looper on Android.
Easyband - good for mapping out song ideas
Solo - nice for noodling around with song ideas
My guitar - more realistic than Solo, but a bit fiddly on the touch screen as your fingers have no traction on the strings.
Moon+ Reader
Showtimes
aCar - good for tracking costs and mileage

whats your favourite launcher, keyboard, browser, SMS, Gallery App, MP3 etc?
My favorite launcher is MicroSoft beta,
Keyboard:- Gboard
Browser:- Samsung Internet
SMS:- Textra
Gallery:- QuickPic
Themes:- black
MP3:-
Launcher - Nova Prime, I've tried a whole lot of them over the years, and none stack up to it.
Keyboard - Gboard, its autocorrect seems to understand me best.
Browser - They all kind of suck on mobile, but I've found that Chrome is the least sucky?
SMS - Textra, by a landslide. I think I've tried them all and I keep going back.
Gallery - I honestly just use the stock gallery app. I've used Google's and QuickPic, but they don't seem to do anything different for me.
Theme - I haven't changed from the one that came out of the box, except to flash root and then PartCyborg's ROM.
MP3 - I listen to Pandora and Spotify almost exclusively. Every once in a while I'll fire up Sirius. But I don't store MP3s on my phone.
