Use titanium to remove what you don't like.
or if you using ics go to settings -> all apps and disable what you dont have use..
Can i like edit the gapps zip to remove apks i don't need?
The three apk you need for Market to work are: GoogleServicesFramework, GooglePartnerSetup and Vending.
For it to work correctly copy the apk(s) to "/system/app". Set their permission to: RW - R - R, and reboot.

For anyone looking for the Inverted PlayStore v3.9.16, here ya go... I've been running this for past 5 days... works perfect on my SR. I didn't flash, but opted to extract the phonesky.apk from the package, reset permissions (rw.r.r), and pushed to my /system/app folder. Reboot, all should be well. This site also has other inverted Gapps (check the "Download" link on home page).

Play Store - Blacked Out and Transparent
Installation instructions:
Play Store : Download the zip file and boot into recovery and flash it.. Use a file explorer that you can view system files and make sure your Market is named Phonesky.apk instead of Vending.apk.. Rename it if needed and reboot.. then flash zip.
Play Music : Uninstall your old Google Play Music app first. Download mine and install it like a normal application
For me personally, with the Play zip used on Elegancia 3.71 Rom, I simply booted into recovery, installed, rebooted...that's it, worked perfect.
Make a backup first!
