I created a zip for people who dont want to use a custom rom, but want Google on their device.
This zip contains stock odex files for a working Google Play Setup.

Play Store - Blacked Out and Transparent
Installation instructions:
Play Store : Download the zip file and boot into recovery and flash it.. Use a file explorer that you can view system files and make sure your Market is named Phonesky.apk instead of Vending.apk.. Rename it if needed and reboot.. then flash zip.
Play Music : Uninstall your old Google Play Music app first. Download mine and install it like a normal application
For me personally, with the Play zip used on Elegancia 3.71 Rom, I simply booted into recovery, installed, rebooted...that's it, worked perfect.
Make a backup first!

I am on cm11 and I want to create my own gapps package , I downloaded the google stock package from here : http://forum.xda-developers.com/showthread.php?t=2397942 and just removed the apks I don't need.
For example I want the new camera and google gallery but I want to keep the Trebuchet launcher. Unfortunately after I removed the google home apk, the script removed Trebuchet anyway so I ended up with no launcher at all
What do I have to change in order for that to work?

Why not download a smaller gapp package, then take what you need from a larger one and place it in the apk? Never remove the home.apk or launcher.apk ever.

So can I just take this package http://wiki.cyanogenmod.org/w/Google_Apps for example and just add the new google camera apk , does it override the aosp camera and gallery for example?

Apps are available on Google Play so install the apps you want then manage them with TiBu.

FYI, you would need to modify the updater-script to prevent it from deleting what you want to keep, etc

On my Droid 3, I recently flashed the Google Now zip and followed the instructions on this site. It has been working great so far.
I noticed that the zip itself matches the folder hierarchy of the phone system folders. Am I correct in understanding that if I were to replace the Velvet.apk with the newest version of Google Search (after renaming it properly) that if I flashed this new zip, it would give me the updated Google Search/Google Now?
Here we have 3 of the stock JB Gallery and camera apps.
1.- AOSP 4.2.2 Gallery ZIP: The stock AOSP Gallery app (id:com.android.gallery3d), released for Android 4.2.2, does not have Photosphere, just flash it or extract it.
2.- Google Gallery ZIP: The Google Gallery app (id:com.google.android.gallery3d), released for Android 4.3, just flash it or extract it.
3.- Google Gallery APK: Same as Google Gallery ZIP, but with the libraries inside the apk file, very useful for non-root users, install as a normal apk file.

You need to remove ATTContact app and replace it with Google Contact
You need to remove Mms/Sms app and replace it with Google Massage (you can also get from playstore, and put it in system)
You should replace Stock launcher with Google Now Launcher for perfect Nexus 4 experience (however pixel launcher available for 5.1.1)
You should replace Stock Calendar with Google Calendar.
I have bundled all the necessary icon, just open apk with winrar, replace the icon file.
