I was looking through my memory card and deleted stuff I thought was "useless" and I think I deleted stuff that was a requirement for the phone.

Log into your Google Drive account via a desktop browser. Click Setting (The Sprocket) then "Manage Apps".. Remove HelloFax
Hi since lollipop I can't remove apps, just freeze. Is this because I'm on an odex rom, and they are split? Or is it lollipop stopping me? The tools work great with kk4.4.2

You shouldn't have issues removing apps. Try using a file explorer and deleting the app's folder rather than just the base.apk

Regarding your inquiry not actually sure if you can delete the mentioned apps on your phone.
Remember, deleting built in apps may cause problems so make sure you know what you are doing, at least have a backup incase everything fails.
