I have a question regarding how to flash CM 11.
After unlocking the bootloader, should I install a custom recovery and flash the ROM zip from custom recovery or should I put the phone in fastboot mode and flash the rom from there (http://www.androidheadlines.com/2014/07/android-flash-oneplus-one-stock-cyanogenmod-11s.html)?

You should download a custom recovery, personally recommend twrp. I would flash the custom ROM from the dev section in recovery, to make sure you get the most updated version.
Hello, my HAM7 is rooted and with a custom revovery, and I could not install the updates because of the recovery, how can I install the original stock recovery?

Get your stock HAM7 firmware, unzip the archive and extract the UPDATE.APP file with huawei update extractor (you can search this on this forum) and flash the stock recovery manually via bootloader.

a stock flash file for my device which i downloaded from the official site isn't the stock rom ?
or the both are same ?

Both are like the same, in this case.
Just to make it little clear, Stock ROM is like an OS and flash file is like the setup that is used to install it
if i want to cook a custom rom can i use the flash file and customize it ?
then can i flash it using custom recovery ?

Your on a locked bootloader. You can't flash a custom recovery, the only option you have is safestrap. You also cannot flash custom roms

There's no way to do it with the stock recovery. You'll need to unlock your bootloader and flash the file via twrp (or just boot twrp if you don't wanna lose the stock recovery) or root and replace the file.
