I was wondering if there is a way to check the Cpu binning in our Nexus 5s like we do for the Nexus 4 (I'm asking, I'm not even sure there are differences among the Snapdragon 800 SoCs like it was for the Snapdragon 400s). Thank you.

That's up to you... AOSP is more "pure" but CM is based on it so at heart they are no different.
Which is "better" is like asking what the best car is, everyone has an opinion and the answer varies by the persons needs and wants.
Try them both and decide for yourself.
