My experience of replacing a kernel in a rom is to flash it as you would flash anything else, in a custom recovery. Have you rooted and have a custom recovery on your tab?
P.S. I DONT HAVE THIS DEVICE XD I AM JUST USING ANDROID EXPERIENCE/KNOWLEDGE

Hello
For overclocking, you need a custom kernel that supports overclocking. You can look for one in the Galaxy Mini Android development or Galaxy Mini Original Android development subforums.
