I recently flashed my Captivate with Cognition 4.2.2. I just noticed that 4.3 is out now with some desirable updates. Furthermore, I notice that there is a full ROM and a "Kernel only" version.
I have noticed that some people only talk about doing a full ODIN procedure back to stock is only necessary when flashing an entirely new ROM.
If I update to 4.3 :
Can I flash the kernel only? Or is there lot's of important things I will be missing. Is it only recommended to update kernel if I know that there have ONLY been updates to the kernel?
Is it important to flash back to Stock? Or can I just put the update in the root directory and use clockwork to boot after renaming the ROM to "update.zip"?
Any information on the way that these parts intertwine and what an update to one does to the others would be appreciated.

Current setup is rooted with I3VRBLK3 baseband and VRUCML1 Build.
I've looked around but am still confused about how to update to current base and build but retain root properly. Any links or help would be greatly appreciated!

D2lte is for AOSP roms. Just want to be clear, are you seeking to use AOSP or TouchWiz? TouchWiz roms use either "d2vzw" or "Sch-i535" model name.
AOSP roms go by "d2vzw" or "d2lte." AOSP has moved to "d2lte" since about May, so most if not all AOSP roms that are still being updated should be found under "d2lte" model name now. They are named "d2lte" because the zip has consolidated d2tmo, d2att, d2spr, d2vzw (4 big US carriers) and several other smaller carriers into one zip. We all flash the same zip and the zip installs the proper files per carrier.
So, what do you want to update specifically?

I guess my confusion comes from the fact that I wanted to update to a 4.4 AOSP rom but read that I needed to upgrade baseband which would lock me into always being on 4.4 roms in future and if not done correctly could lose root. Maybe I am reading too much into it?

You are misinterpreting. The latest firmware that we can safely install and keep our unlocked bootloader is VRBMF1. The firmware includes about 7 partitions which Invisiblek outlines here and he provides a synopsis that is very well put. His links have been done for some time btw.
VRBMF1 firmware + VRUCML1 modem, VRBMF1 firmware, or VRBMB1 firmware are the only combos that anyone should really be using with an unlocked bootloader.

I'm also confused about the exact steps here. Do I need to download and install the firmware first, then update the modem, and THEN finally the rom?
All the links I go to warn me in big red letters about bricks and locked bootloaders. Is there any step by step guide for people going form 10.2 nightlies on a d2vzw to a cm11 release on d2lte? Thanks!

That firmware is super old, you're going to have to do some digging to find recent firmware. Then follow these steps.
1) update your recovery to the latest cwm, twrp, or philz.
2) find the whole MF1 firmware package, and preferably an ML1 modem (not the firmware). Download both
3) download the cyanogen rom you want to flash, a recent kernel is included in that download. No need to manually update.
4) open your recovery. Then factory reset, wipe cache, wipe dalvik cache, then format system.
5) flash your rom, followed by your gapps, followed by the MF1 firmware, followed by the ML1 modem only (not the firmware). Order on this is important.
6) if you have duplicate data, you need to eventually format your internal SD card, but it may not be necessary. You should backup anything you want to keep first.
All the warning red text everywhere is for people on the 4.3 firmware which is ML1 firmware and above. You have the LF2 firmware which is about 2 years old. You should actually be looking at all the old guides linked in the original sticky thread.
Just don't accept an OTA on a stock rom and you have nothing to worry about. It really doesn't matter when you flash the firmware, just make sure you go MF1 to ML1 modem, if you go the opposite way you'll erase the ML1 modem.
Just so you know, flashing radios does not require a wipe so you can do it anytime you want. Do it first or do it last, or do it after you boot up the rom so you don't forget something. That's what I do if I'm flashing a bunch of stuff at once.

Thanks so much for the info. I am bookmarking this for later use. Considering that I might have to format the SD card, I will hold off on doing this till I get a new phone later this summer (2 years is up already). Once I have a newer primary phone, I'll play to my heart's content with the old GS3.

I have however issued a few Mods such as extreme power saving and built in tether. Can I just load the 4.4.4 firmware and radios, switch back to stock recovery and take the OTA to 4.4.4 without having to wipe anything or since I have used some mods do I now have to wipe my device and put everything back after getting the 4.4.4 update. The reason I ask is I like having the stock features while just using google now launcher on top of sense. Also would any of you have a recommendation on a ROM to achieve this same thing so I dont have to go through this everytime I want to take the newest OTA if it is not possible to take without wiping.

Flash the ruu here. That will get you to 4.4.3 the easy way and make you 100% stock so you can take the ruu. Then flash twrp and flash su or the rooted Rom of your choosing.
The RUU is one way to go, although I would never update via OTA...
Another would be to flash the firmware and radios from here:

He usually has them up a few hours after a new OTA has been released. Even better - try his stock, debloated CleanROM once it's out.
This way you can keep your recovery. You can even try to just flash the 4.4.4 firmware and radios and see if it runs your current 4.2 ROM ok. But I would not update the rom from version to version without a wipe.
The setup is the price to pay for getting a new and hopefully better Android version.

I am currently unlocked/rooted on 4.1.2 (beanstown rom), and want to update to a 4.3 variant, but wanted to be sure I have my steps right.
My assumption is that I can just flash the proper modem, update my TWRP, and install the rom, but I want to be sure I am not missing anything.
Can anyone point me int he right direction?
Would I just ODIN a new modem on there, or is there a better way?

If you want to update to a new modem you would just flash the zip on twrp. Just be careful to look for the right version of Alliance and not the one for the locked version.
And yes update your twrp also

You should probably flash the firmware and radios before you flash any Lollipop Sense ROM
