Give it a go, if it's not compatible it just won't work and won't affect your phone
Works very well for my Sensation XE ;-)

Dual boot for s-on sensation

Is it possible to use dual boot on an s-on HTC sensation or will I need to s-off to do that?

No its not you can't make double partitions and if you could there is no bootloader like GNU on linux! You can always back-up and restore.. but that takes a long time!
