I know I can just flash the factory image but is that enough? I don't want Verizon to know that the phone has been messed with. I am currently running a jb rom and have the bootloader unlocked. How should I go about doing this.

Sure are, just make sure to use the kernel labeled as TW in the file name.
KT747, Leankernel, Faux, Deviant, and Galaxy KOR are a few that work with VRBLK3. I know for a fact that KT747 and Leankernel support voltage tweaks. You can check out the other kernel threads and see if they do as well. Make sure to perform a nandroid before flashing any kernel.
