I love my rooted phone and everything but I am now having issues with my voicemail. I get the icon saying I have one in the tray but when I click on it and it say missing voicemail number. I would be thankful for any help.

Go to phone> settings> voicemail settings> voicemail number and enter 18056377243 (1-805-MESSAGE)

I dont think thats possible since most voicemails are a service and the actual voicemails are on there servers most of the time... Not exactly sure but I'm pretty sure thats how it works!

so my phone has an unknown phone number. does anyone know how to change this?
I'm not sure how exactly, but it doesn't affect anything. A few other roms do this. There's no need to change it.

It has quite a bit to do with things I've noticed, especially the issue with wifi calling, and as mentioned the picture in stock messaging app.

How do I get the stock messaging app completely removed if I want to use something like Handsent or SMS Pro and not have multiple messages pop up ?

I can receive texts but not send them. I haven't changed anything so there shouldn't be anything new. I'm on beanstalk 1.3. Any ideas on a fix?

You could switch over to google voice and use that, also offers free visual voicemail.
