Yes you can run stock rom with s-off and root access however I am not sure if OTA updates will still work. Even if they did work I would imagine you would lose root access once the OTA update has been applied.
So when I flash stock ruu.exe nothing happens with S-OFF neither root?
You will need the stock recovery to get OTA updates to install, they won't work with CWM
and with stock recovery I'll be able to create backups of installed roms? And how do I reinstall stock recovery?

Whats the easiest way to get an ota update while rooted? Would it be just flashing to stock recovery again, taking the ota, and then rerooting?
If this is the case, does anyone have a stock 4.4.2 recovery .zip that I can flash?
easiest way is just flashing a stock rooted rom via your recovery. but if you want an ota, you can have root, but your system has to be completely stock. and you will lose root and your custom recovery. youd have to reflash your recovery and su to reroot.

Just curious to what I need to do to my phone in order to get an OTA installed if I'm on stock rom, but rooted and TWRP recovery?
I have Galaxy S6 running 5.1.1 stock rom.
The only reason I need root so xposed could be installed. What is the best way to root and install recovery without loosing any data?
Not worried about tripping knox etc.

simple flash a custom recovery injected with root, like chainfire's or TWRP using odin

I have a Sonim XP7, i rooted it with the latest IROOT, i was wondering how do i go about un-rooting the phone and restoring it to stock? without flashing the rom, which there is no rom available, unless someone can provide me one?
would it be safe to un-root it?
If you have root access can you try and pull off some of the firmware files like boot and recovery? Many people have bricked sonims that could be repaired by these files.

May be do Hard Reset, but all data will be removed.
