I have an unlocked TMOUS HD2 (using unlock code) and i'm using stock rom 2.10 and i want to upgrade to the latest stock rom from the t-mobile site, will the phone be locked again??

My Carrier is t-mobile germany, but I unbranded my phone. Do I still have to rely on the gratitude for t-mobile?
If you have an unbranded phone, you won't have to wait for carrier approval.

how unbrand the phone? it just anough to remove sim lock?
I flashed an unbranded 7004 ROM from this forum. I do not think my phone was simlocked, though.

I have the Vodafone Australia HTC Sensation with CID Vodap021. I was wondering if I change my cid from that to vodap01 without s-offing first, will I get the official vodafone UK update? I don't think firmware wise they are very different....

No. The CID has nothing to do with that. And you can't change it anyway when you're S-OFF.
