I'm a total 'droid n00b so please be gentle with me.
I know I have seen Android devices which kinda "spread" an oversized wallpaper across all the home screens so that scrolling through the home screens also scrolls across the wallpaper. I just tried to set an oversized wallpaper and it made me crop it to the screen res
Is this a feature which is only available on some phones, or is there a tweak you have to load first... or am I totally blowing it out of my arse and the whole thing is a figment of my imagination?

get rid of Sense by replacing it with ADW Launcher. It will allow you to crop a wallpaper correctly for your home screen and it runs WAY faster with a ton more features. I would also recommend getting the paid version of the app. You can get it from Market.
also.. after you get ADW and are running it... go into Accounts & Sync in your settings and disable all of the Sense stuff.
edit: thought i should also add this recommendation. if you like the sense widgets and hate to part with them. or the weather clock...etc. you can get an app from market called Beautiful Widgets. it runs way faster than sense and does the same stuff... again with more options.
Errr.... that's all very nice but how does it relate to my question?
It is sense that is causing the wallpaper to display as it is, change sense back to the android stock option by removing sense will then enable the wallpaper you wanted.

In response to your original question, most Android devices and versions do spread the wallpaper across all the home screens, including older versions of Sense. Sense 3.0 however uses vertical wallpapers that do not scroll, it is a new feature in this version. I imagine they did it because of the 3D rotation of the home screens and it would make stretched wallpapers look weird when swiping, but who knows.
It would be pretty complex to have each screen with its own section of the wallpaper seperate, spin, slow and expand, and finally rest at the ending homescreen.

It seems that it is not possible to have different wallpapers for home and lock screens using standard capabilities of HTC Sense. However, this topic may give you some ideas how to get what you want.
Go to personalize - display - lockscreen style. Choose wallpaper and hit settings. Then you can choose between "use home wallpaper" and "use custom wallpaper". Choose the custom wallpaper you want to and this will be shown as the lockscreen wallpaper. Can be another one than the one for the home screen

It is entirely possible to have two different wallpapers, however I don't think it is possible to have a Live Wallpaper at the lockscreen and a static wallpaper at the desktop. It is possible to have a Live Wallpaper at desktop and a static one at the lockscreen though.

I have been reading through many threads about homescreen layouts and wallpapers and lots of posters mention 'hubs' and 'subhubs'. This seems to be a sort of menu structure whereby the home screen has links to one of the subsequent screens. This seems to be to be a great principle to adopt - allowing for a cleaner appearance to the home screen but I haven't a clue what to even use to create it. Anybody willing to explain the basics to me? Do I need a particular launcher or widget set or is it built into Android. I have a transformer infinity running jelly bean.

I'm not really sure but it could be like the screen structure used with many launchers (ADW, Go, Sense, etc; Sense for sure not sure about the others - haven't used them in quite some time) where if you pinch the homescreen then you are presented with all 7 screens as icons centered around the homescreen. I think the homescreen is like the hub and all the other screens are subhubs. From this screen you can select any screen and be taken directly there not having to page or swipe thru multiple screens just to arrive at your target screen. My HTC DINC2 has this structure in its stock Sense Launcher and I've seen it in other lauchers. Regarding wallpapers, each screen can have its own wallpaper on some lauchers.
Seems to be a minimalist approach at doing the same thing but with links to subhubs (other screens) from the hub (homescreen).

Hi! I have a Z3 with Muzei as a live wallpaper which updates images every day. I really like to have the current wallpapers in the lockscreen as well but I haven't found any option like that. Is there any way to deactivate the lockscreen so only the wallpaper could be seen or maybe replicate the same wallpaper configuration to the lockscreen?

You can try the Facebook Home app. There is an option to use the same wallpaper as the one used in the home-screen

Hi, I was searching the whole Web for the same thing.
I think with Muzei we will not be able to sync our start screen with our lock screen with Muzei, since that is a Live Wallpaper and those are not supported on lock screen.
I want to get the current BIng picture of the day on my screens -- automaticaly. Well, I think I have to live without this....
So I've not had a Samsung device since the S5, is it normal that I can't have a live wallpaper from an app (Let's say liveloop) on the lockscreen and a static wallpaper as the homescreen, as far as I've tried when I set a live wallpaper and then set a static one for the home screen the lock screen wallpaper changes to the default one

Well, they are not called live wallpapers anymore. Just called video wallpapers. I use one of the ones that come with the phone and have a static picture on my home screen. Works just fine. I have tried other video wallpapers, but could not find one I liked any better then the one it came with. You can use the theming to get wallpapers, but it will usually change a lot of other things you may not want changed. I did use theming to be able to grab a wallpaper I wanted. Revert to default and then change to the wallpaper I wanted. Good luck.

My only problem is I don't want to use a video wallpaper, if I want to use a live wallpaper from an app like Walloop I can't have it just on my lockscreen, it has to be both

Yes the phone supports Live wallpapers on the lockscreen. In wallpapers and style click on my wallpapers then on the 3 dots.
How to
Install the live wallpaper app, then go to my wallpapers the three dot menu and select live wallpapers and will open where you can select the wallpapers you have installed, you can apply as lock screen and homescreen or homescreen only.
